• Strawberries500g
• Double cream400ml

1. 1Purée half of the strawberries in a blender.
2. 2Chop the remaining strawberries, setting aside four whole ones for garnish.
3. 3Whip the double cream until stiff peaks form.
4. 4Fold the strawberry purée and crushed meringue into the whipped cream.
5. 5Gently fold in the chopped strawberries and ginger cordial.
6. 6Divide the mixture equally among four cold wine glasses.
7. 7Garnish each glass with a reserved strawberry and a sprig of mint.
