Key Lime Pie

• Digestive biscuits300g
• Butter, melted150g
• Condensed milk400g
• Egg yolks3
• Limes (juice and zest)4
• Double cream300ml
• Icing sugar1 tbsp
• Lime zest (for garnish)to serve

1. 1Preheat oven to 160°C (140°C fan).
2. 2Crush biscuits into crumbs and mix thoroughly with melted butter.
3. 3Press mixture into the base and sides of a 22cm tart tin.
4. 4Bake crust for 10 minutes, then remove and let cool. 10:00
5. 5Whisk egg yolks for 1 minute; add condensed milk and whisk 3 minutes more. 1:00
6. 6Whisk in lime juice and zest for 3 minutes; pour into cooled crust. 3:00
7. 7Bake for 15 minutes; cool and chill for at least 3 hours. 15:00
8. 8Whip cream with icing sugar and dollop over pie before serving.
